Asian Chicken Bowl

This recipe is a budget-friendly and healthy meal idea using some of the ingredients packed in our emergency food hampers that are distributed weekly by the Community Food Assistance Network.

Ingredients
- 1 package ramen noodles, seasoning package discarded
- 1 ½ cups coleslaw (or mixture of shredded cabbage and carrots)
- ½ cup edamame beans, lima beans, or green peas
- ¼ cup green onions, diced
- ¼ cup slivered almonds
- 2 chicken breasts, cooked and cubed
- 1 (15 ounce) can mandarin oranges, drained and juices saved
- 1 tablespoon vegetable or olive oil
- 1 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon juice from canned mandarin oranges
Instructions
- Bring water to a boil for noodles. Break into chunks before adding water, cooking according to package instructions. When cooked, drain and rinse in cold water.
- In a small bowl, whisk together oil, rice vinegar, soy sauce and mandarin orange juices.
- In a large bowl, add cooked noodles, coleslaw, edamame beans, green onions, slivered almonds, chicken, and mandarin oranges. Pour dressing mixture over top and toss to combine.
