Ingredients
- 1 tablespoon oil
- ¼ small onion, finely diced
- ¼ small green pepper, finely diced
- 1 cup black beans, drained and rinsed
- ¾–1 cup cheese, shredded
- 4 (8-inch) tortillas
Instructions
- Heat oil in a skillet over medium heat. Add onion and peppers, sauté under tender.
- Add beans and cook for 2–3 minutes or until heated thorough. Set aside.
- Lay tortillas out flat. Divide cheese evenly among tortillas. Top with equal amounts of bean mixture. Fold in half to close.
- Cook tortillas in a greased skillet over medium heat, flipping once golden brown.
- Cut into wedges before serving.
