Ingredients

  • 3 large hard-boiled eggs
  • 2 tablespoons mayonnaise
  • 1 teaspoon of mustard (yellow or Dijon)
  • Salt and pepper to taste
  • ½ stalk of celery, diced
  • 1 tablespoon red onions, diced (optional)

Instructions

  1. Chop the eggs to about ¼ inch chunks.
  2. Mix the mayonnaise, mustard, salt, and pepper in a bowl.
  3. Add the chopped eggs, diced celery, and diced onions. Mix to combine.
  4. Serve immediately on bread, crackers, with vegetables, or on its own.
