Banana Chocolate Chip Granola Bars

Ingredients

  • 4 cups old-fashioned or quick oats
  • ¼ cup flour
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ cup vegetable oil or melted butter
  • ¼ cup honey
  • ¾ cup ripe banana, mashed
  • 2 teaspoons vanilla extract
  • 1 large egg
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350 F. Grease a large baking dish and line with parchment paper.
  2. In a large bowl, combine oats, flour, cinnamon, and salt.
  3. In a separate bowl, whisk together vegetable oil/melted butter, honey, banana, and vanilla extract. Whisk in egg.
  4. Add wet mixture to of dry mixture. Stir until combined. Stir in chocolate chips (optional).
  5. Spread mixture in an even layer in baking dish. Using hands or a cup, press down mixture until firmly packed.
  6. Bake for 32–35 minutes or until middle is slightly firm and top is golden brown.
  7. Let cool on the counter and then refrigerate for 2 hours. Cut into 16 bars.

Note: These bars can be frozen for up to 2 months.
