Crispy Smashed Potatoes

Ingredients

  • 2 pounds small potatoes
  • ¼ teaspoon salt
  • 4 tablespoons oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Pepper, to taste
  • 2 tablespoons chopped fresh parsley, chives, and/or green onion (optional)

Instructions

  1. Preheat oven to 425 F. Grease a baking sheet with 1 tablespoon of oil.
  2. Place potatoes in a large pot and fill with water until fully submerged. Bring to a boil over medium–high heat and cook for 20–25 minutes or until tender when pierced with a fork.
  3. Drain potatoes and let cool for 5 minutes.
  4. Place potatoes on baking sheet and use a potato masher or a cup to flatten potatoes to ½ inch thickness.
  5. Drizzle remaining 3 tablespoons of oil over potatoes and sprinkle with garlic powder, onion powder, salt, and pepper.
  6. Bake for 25–30 minutes or until potatoes are golden brown.
