Ingredients
- 1 tablespoon oil
- 1 small onion, chopped
- 3 cloves garlic, minced (or 3/4 teaspoon garlic powder)
- 1 cup quick cooking rice
- 2 cups milk
- 1 cup chicken or vegetable broth
- 1/2 teaspoon salt
- 2 1/2 cups broccoli, cut into small florets
- 2 cups canned chickpeas, rinsed and drained
- 1 cup grated cheese
Instructions
- In a skillet over medium heat, sauté onions in oil for 5 minutes. Add garlic and cook for another 30 seconds.
- Add rice and cook for 1-2 minutes to lightly brown. Stir in milk, broth, and salt. Bring to a boil and then reduce heat to low, cover and cook for 10 minutes.
- Stir in broccoli and chickpeas. Cover and cook for 10 more minutes or until rice is cooked and broccoli is tender.
- Remove from heat and stir in half of the cheese. Sprinkle the rest on the top and cover until cheese is melted.
