Ingredients
- 3 ½ cups cooked lentils or rinsed canned lentils
- 1 washed and chopped red bell pepper
- 1 washed and diced cucumber
- 1 tablespoon olive oil (substitute with vegetable oil or any oil you prefer)

¼ cup balsamic vinegar (substitute with white vinegar or any vinegar you prefer)
Instructions
- In a large bowl, combine the lentils, bell pepper, and cucumber.
- Pour the oil and vinegar over the salad and toss to combine.
