Ingredients

Dough

  • 3 cups flour
  • Pinch of salt
  • 1 tablespoon sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons toasted sesame seeds (optional)
  • 1/2 teaspoon dry yeast
  • 1 cup ghee, room temperature
  • 1/3 cup warm water

Pistachio and Honey Filling

  • 1 tablespoon ghee or butter
  • 1 tablespoon flour
  • 1 teaspoon sesame seeds
  • 1/4 cup honey
  • 1/2 cup pistachios, coarsely ground

Garnish

  • Powdered sugar

Directions

  1. In a large bowl, combine flour, salt, sugar, yeast, cinnamon, and sesame seeds. Add ghee and mix well to incorporate.
  2. Gradually add water, while continuing to mix, until a consistent dough forms. Cover and let rest for one hour.
  3. In a small pot over medium heat, melt butter/ghee. Mix in flour and continue to cook until golden brown, stirring frequently.
  4. Remove from heat and stir in honey and sesame seeds. Return to low heat and cook until mixture thickens.
  5. Once thick, remove from heat and stir in pistachios. Allow mixture to cool for 10 minutes and then roll into 20 small balls.
  6. Divide rested dough into 20 balls.
  7. Take one filling ball and place in the center of a dough ball. Close the dough around the filling to form a ball. Press with a Mamoul tool or fork to make an engraving. Repeat for remaining cookies.
  8. Place cookies on a baking sheet lined with parchment paper. Bake at 350°F for 20-25 minutes or until the bottom is golden brown.
  9. Let cool and then sprinkle with powdered sugar before serving.
